Following the marron glace experience, Ringo threw in another question on how is rock sugar made…

I wasn’t too sure anymore but I did remember being a kid and making those on wooden sticks. So, just to make sure we knew what we were talking about, we did some pink color rock sugar on bamboo sticks!

It’s fairly simple… boil 2 part of sugar with 1 part of water to 115 Celsius and deep a wooden stick straight in the liquid. Leave it for as long as needed to allow the crystal to form around the wood.

Simple recrystallization of sugar… very cool! We also left a few pieces in the jar for a week and it turned into a huge ball of sugar :)
